Avocado Taco

 First Step: Do right by the Avocado.  Start with ripe avocados that can hold their shape. Slice thinly and make them pretty- like spreading a deck of cards on a table ;)

 Then:  Think Texture two ways: 

1)    I had cucumber, carrot, red onion, radish— all cut into strips for the best taco mouthful experience—and drizzled in rice vinegar, fresh lime juice, salt, and chopped cilantro.

 2)    Crush some roasted peanuts and mix with a bit of chipotle in adobo

Next:  Creamy Goodness:  Mix your favorite dairy, mine is whole milk Greek yogurt, with a pinch of salt and a generous spoonful or two of chipotle in adobo.

Taco Time:  Heat up some tortillas—any way but the microwave!  Put a generous dollop of the chipotle cream on the tortilla, follow with the avocados and top with crunchy salad and spicy peanuts.   Sprinkle some Tajin on top, because why not!
